Work out which features you need (built-in maps, music, dive or golf modes, solar charging) and buy the cheapest model that has them, because an older Fenix often beats a newer entry model for serious use.
Check the battery and the screen. Garmin's big selling point is battery life, which fades with age, so ask how many days it lasts on a charge now versus new. Inspect the screen and bezel for scratches (these watches get knocked about), confirm the buttons and touchscreen respond, and check the charging contacts are not corroded.
